Stuffed Cajun Meat Market and Specialty Foods
“This is a typical meat market you will see all over southern Louisiana,” co-founder Kurt Knies said.
But in the Lake Creek area, where the shop opened in July 2010, Stuffed stands out. Somewhere between a deli, a restaurant and a corner store, Stuffed serves lunch and dinner; carries prepared items to be cooked at home, such as homemade boudin—pork rice casserole cased like a sausage ($4.99); and has shelves lined with spices, sauces and mixes driven in from Louisiana by Tim Garrett, Knies’ business partner.
But, as its name suggests, Stuffed’s specialty lies elsewhere.
“We are all about our dressing,” Kneis said, “and then stuffing that dressing into meat. That’s really our thing.”
The most popular of Stuffed’s 12 dressings is the crawfish rice in deboned chicken ($4.99 per pound) and cornbread in pork tenderloin, wrapped in bacon ($7.99 per pound). These typically come in 1.5- to 3-pound servings and can feed about four to five people, Knies said.
Knies said a common misconception about his menu is that all of the dishes are spicy.
“The crawfish rice dressing? A 3-year-old could eat it and not blink an eye,” he said. “Cajun food is nothing more than a French influence on what we were already doing here in the states. It starts with simple, fresh ingredients, and it is all about process.”
For etouffee, a creamy soup-like dish served over rice, order is everything.
“You start by cooking the vegetables in the butter and then adding the cream and cooking that down and then putting in the seafood. You can’t just throw it all together,” Knies said.
Until the bottom dropped out of the real estate market, Garrett and Knies were partners in a mortgage-lending business from 1998 to 2008.
“We started looking for what we were going to do, and it was Tim who came up with the idea of opening a meat market in Austin,” Knies said.
Garrett, a native of Louisiana, knew how to cook most of what they wanted to include on the menu; his mom, aunt and grandmother supplied the rest. But taking those recipes and commercializing them was not simple.
